Executive Chef / Kitchen Manager

This position promotes and supports the learning experience of Marian University students by, overseeing kitchen staff and ensure quality of food items. Their duties include hiring and training staff to cook their dishes, creating dishes to add to menus, and maintain a steady work flow.  

Essential Functions: 

  1.  Design, cost out, and price delicious and attractive menus and continuously making improvements. 
  2. Manage of all production and central commissary operations, meal plan menu cycle development processes and menu satisfaction 
  3. Advanced culinary skills including food preparation, flavor pairings, and other cooking best practices 
  4. Ensure food safety, sanitation, and workplace safety enforcement. Adhere to HAACP standards and regulations, county guidelines, hot and cold food temperature holding, etc.  
  5. Comfortable training, directing, and supervising kitchen staff 
  6. Exceptional leadership skills, including motivation, and goal-setting 
  7. Excellent communication and interpersonal skills 
  8. Time management and organization 
  9. Store, rotate and monitoring inventory according to the state and federal guidelines regarding safe food holding practices. 
  10. In charge of managing inventory and placing orders of products on a daily basis.  
  11. Record and maintain daily food usage.  
  12. Direct, mentor, and monitor job exceptions, performances evaluations, and production of the cooks, cashiers, and dishwashers 
  13. Responsible for conducting annual audits with health department

Other Responsibility: 

  1. Performs other work-related duties as necessary or as assigned 

Education, Experience, and Skills Required: 

  1. Culinary or food and beverage management degree 
  2. 4 years’ experience in hospitality industry, with emphasis on food and beverage  
  3. ServSafe Certified required 
  4. The ability to work in a fast pace environment 
  5. Excellent verbal and written communication  
  6. Strong knowledge of related computer software, including Microsoft word, excel, and restaurant management software 
  7. Ability to multitask, meet specific deadlines, and prioritize tasks and assignments 
  8. Must be flexible, to include evening and weekends 
  9. Willingly support the Mission and Core Values of the University
